Vanilla extract | 2 teaspoons |
Light brown sugar | 10 teaspoons |
Unsweetened applesauce or 1 banana | ½ cup |
Coconut oil | 4 tablespoons |
Chocolate chips - or whatever you want to add or top them with! |
Steps
1. Turn your oatmeal into oatmeal flour by mixing or processing it until it looks like flour.
2. In a bowl, combine oatmeal, baking powder, protein powder, salt, and ground cinnamon.
3. Mix them.

5. Combine your egg, vanilla extract, brown sugar, applesauce, and melted coconut oil in a bowl.

Coconut sugar or light brown sugar | 1/4 cup |
Kosher salt | 1/4 teaspoon |
Large egg | 1 |
Large egg white | 1 |
Pure vanilla extract | 1/2 teaspoon |
Baking powder | 1/4 teaspoon |

- Place a rack in the centre of your oven and preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, combine peanut butter, coconut blossom sugar, salt, egg, egg white and vanilla extract.
- Mix vigorously until the ingredients are well blended. Sprinkle the baking soda on top.
- Using a rubber spatula, incorporate the protein powder and coconut flour until well combined. They will appear very dry at first but will continue to come together as you stir and press. Fold in the chocolate chips.
